On their small family farm in Liguria the Cassini family manages about 2000 olive trees, all of the Taggiasca variety. From this limited production comes a new product, the Krosus organic, produced exclusively from organic Taggiasca olives grown in the hills north of the Italian Riviera. Harvested while green and cold extracted, the result is a light fruity oil balanced with slight bitterness and spice. Very sweet on entry, the oil has predominant aromas of apple and almond accompanied by floral and herbaceous notes. The oil is great with leafy green salads, perfect for making mayonnaise, and exquisite when dressing fish or white meat.
