Limited-edition organic extra virgin olive oil from Oro del Desierto — early-harvested Picual and Arbequina from the Tabernas desert, where more than 3,000 hours of sunshine a year produce olives of exceptional character.
Hand-harvested at the very beginning of the season and cold-extracted within hours using 100% renewable energy, this Novello comes at its most vibrant: boldly herbaceous on the nose, with vivid aromas of fresh tomato, green herbs, cut grass, and artichoke — underlined by a characteristic green almond note. On the palate, it is assertive and structured, with firm bitterness and a long, peppery finish that lingers with purpose.
Best enjoyed raw as a finishing oil — drizzle generously over garden tomato salads, grilled meats, bitter greens, or aged cheeses. Natural choice for high-heat cooking.
