Extreme early-harvest extra virgin olive oil from Nobleza del Sur's Vista Alegre Farm in Jaén — produced exclusively from Picual olives hand-harvested in October at the very start of the olive season and cold-extracted the same day at the family-owned mill to capture peak green intensity.
On the nose, it opens with vivid, complex green fruitiness: fresh green tomato, olive leaf, wheat grass, green herbs, and a clean green almond note layered with green banana. On the palate, it enters with an initial fruity sweetness before building to bold, assertive bitterness and a fierce, lingering peppery finish — the hallmark of early-harvest Picual at its most powerful.
Best enjoyed raw — drizzle generously over garden tomato salads, grilled meats, aged cheeses, bitter greens, and quality bread to experience its full complexity.
