Description

Meticulously aged for at least 60 days in oak barrels, this premium balsamic vinegar is carefully crafted from a selection of the finest organic cooked grape musts and enhanced with organic red wine vinegar.

Boasting a 6% acidity, it offers a harmonious blend of sweet and sour aromas and flavors that are both inviting and balanced. On the nose, it presents a sweet and tangy fragrance, complemented by a long-lasting fruity and woody finish. On the palate, the acidity characteristic of balsamic vinegar shines through, underpinned by delicate fruity notes that linger enticingly.

It pairs wonderfully with fresh salads, cooked vegetables, and grilled meats such as beef tenderloin or veal chops. It is perfect with scallops, grilled salmon, or lobster.

Chateau d'Estoublon

Chateau d'Estoublon is located on the southern slopes of the Alpilles, in the heart of Provence, where their orchards and vineyards have been classified A.O.P. Les Baux de Provence since 1995. With 212 acres of olive trees and 47 acres of vineyards, Chateau dEstoublon is rightly considered to be one of the most outstanding sites in the region.

The Grossane, Béruguette, Saloneque, Bouteillan and Picholine olives are the five varieties produced by the Chateau and are harvested by hand from early November to mid-December. All of their olives are extra virgin, cold extracted and pressed in their mill.
