Cold-extracted from the first Coratina olives of the season, Fior D'O Nuovo is Olio Guglielmi's early-season monovarietal — an extreme-intensity novello from the olive groves in Puglia.
On the nose, it opens boldly: intense artichoke, tomato vine, green herbs, and the distinctive character of freshly harvested Coratina in its prime. On the palate, fierce structured bitterness meets a long, lingering peppery finish — the hallmark of Coratina at its most expressive.
Best enjoyed raw: drizzled over warm bruschetta, fresh cheese, raw vegetables, legume soups, and simple grain dishes — where its full complexity can take center stage.
