Organic Nouvelle extra virgin olive oil from Estoublon, crafted from Salonenque and Béruguette olives grown on the AOP-certified southern slopes of the Alpilles in Provence's Vallée des Baux.
Cold-extracted from the first olives of the season, this early harvest olive oil delivers vivid green fruitiness — artichoke and freshly cut grass take the lead, layered with aromatic green herbs and clean almond notes, with the characteristic green hazelnut depth of Béruguette. On the palate, it opens with the gentle, buttery roundness of Salonenque before giving way to a clearly assertive bitterness and a pleasantly bold, lingering spice.
Best enjoyed raw: pour over sea bream carpaccio, finely shaved raw artichokes, garden salads, and creamy burrata, or drizzle over toasted country bread to let its full character shine.
